Soy “milk” – nuances


Soy milk analogues are gaining popularity among people who adhere to a healthy lifestyle due to the absence of animal fats and lactose in the composition. Soy “milk” (usually) contains a sufficient amount of protein and is also enriched with vitamins and minerals

However, the biological value of such drinks is questioned for two reasons:

1. Soy contains protease inhibitors – enzymes for breaking down proteins into peptides (including biologically active ones) and amino acids

2. The bioavailability of Ca, K, Mg, Na and P from cow’s milk is several times higher than from soy analogues. This is due to the metabolism of milk proteins – caseins and their derivatives – in the human body.

Zn is the only mineral. The bioavailability of which is higher when consumed in soy products compared to dairy products.
