Healthy eating: possible risks


French scientists have found that health-conscious consumers who include healthy foods in their diet (wheat flour/whole grain bread, fruits/vegetables, legumes and raw fish) are at greater risk of poisoning than others.

What exactly can cause poisoning?
🔺 zoonotic parasites (raw fish);
🔺 aflatoxin B1 (nuts);
🔺 mycotoxins (cereals / fruits / vegetables);
🔺 allergens (legumes).

Scientists have developed a whole risk ranking system based on the eating habits of consumers (see figure).
