E200 – sorbic acid. according to the chemical structure, it belongs to unsaturated monocarboxylic acids. Used to inhibit the development of molds in foods.

It has recently been found that at the molecular level, sorbic acid reduces the activity of pancreatic enzymes by 50% at a concentration of only 2 mg/l (this is about 0.7% of the maximum allowable rate of 300 mg/l). The ability of sorbic acid to inhibit catalase, destroy cyanocobalamin (vitamin B12) in the human body is noted.
